FoodService expert and Regulator Survey Results for Food Safety Magazine article August 2018: Is It Time to Change How We Clean and Sanitize Food Contact Surfaces with Reusable Wiping Towels?
This survey is referenced in the August 2018 issue of Food Safety Magazine with this title. In order to assess the important opinions of different foodservice food safety professionals (those who lead food safety in their respective corporate businesses including QSR, Fast-causal, casual-dining, cafeteria/buffet restaurants, or other, n = 45; Table 1) and local regulatory authority professionals (those who audit and enforce compliance to their state food code requirements in three states including Ohio, Texas, and Virginia, n = 35; Table 2) for their perception of the risk associated with use of reusable towels in foodservice, a survey (in the months of May to July, 2018) was designed for each respectively, and open only to confirmed participants based on solicitation to their respective organization. Not all questions in each survey were answered by each respondent (noted by number of respondents for each question result). The results of this survey follow.
